CAULIFLOWER BAJJI







INGREDIENTS :

Cauliflower florets
Rice flour : 1/4 cup
Besan flour : 1/2 cup
Red chilli powder : 1/2 tspoon (or) as required
Salt : as required

METHOD :

Make the cauliflower into desired size florets
Clean the florets in salt water and then in normal water.
                                    
Half boil the florets in a bowl, observe that the florets should not be completely cooked.              

                          
In a bowl mix the besan flour, rice flour, chilli powder, salt with water
The batter  should be slightly similar to the idli batter consistency.  
             
                                                       
Dip each floret in the batter &  deep fry in oil till golden color appears.  
         
                                                   
CAULIFLOWER BAJJI IS READY............

Dhaniya Masala Fish Fry


INGREDIENTS :

Fish     : 3
Lemon : 1/2 piece
Salt
Oil

To grind :

Red chillies : 5
Coriander/dhaniya : 3 tspoons
Jeera/cumin : 11/2 tspoon

METHOD :

  • Wash the fish with salt water and then with normal water & keep it aside




  • Dry roast the "to grind" ingredients, let them cool & grind to a fine powder.



  •  Now make a slit to the fish and marinate with the ground powder, salt, lemon & refrigerate/ keep it for atleast 1/2 an hr.


  • Heat oil in a pan fry the fish on both sides till golden brown appears.
IT IS READY TO SERVE.

NOTE :
Tastes good with rohu, pamfret also......
Can deep fry the fish also.

Aloo 65

Aloo 65


INGREDIENTS:


Potatoes : 5
Ginger-garlic paste : 1tspoon
Chilli sauce : 1tspoon
Soya sauce/lime juice : 1tspoon
Corn flour : 2tbspoons
Chilli powder : 1/2tspoon
Salt :  as required
Color (orange red) : pinch (optional)
cashews : few pieces(roasted)
curry leaves : few

METHOD :


  • Wash the potatoes and place in a bowl.

  • Add 1/2 glass of water in a pressure cooker (steel/aluminium) and place the bowl with potatoes. After 1 whistle low the flame & wait for 1 whistle.

  • Take out potatoes - peel off the skin and slice them into desired sizes; Add ginger garlic paste; chili sauce; soya sauce; corn flour; chili powder; salt to this & mix well. Keep it aside for atleast 1hr; Observe a thin layer to be formed on each piece.


  • Deep fry till golden brown appears.
  • Garnish with roasted cashews & curry leaves.
